Scallop Shelf is not a simple, fruit-driven wine, offering a complex savory and mineral impression with floral top notes that emphasize elegance and intrigue over fruit power. Aromas of Rooibos tea and star anise mingle with maraschino cherry and cedar notes in the nose and woodsy, anise, and almost meaty notes create an overall impression of muscle but on a sculpted, athletic frame. Clones: 44% Pommard; 37% 777; 19% 115 Winemaking: 2% whole cluster, on lees for 11 months in 28% new French oak barrels. Bottled unfined and unfiltered. Alcohol/ TA/pH:13.5%/0.54/3.62
